I have heard it is because they are more catholic while northern is protestant and as a rule of thumb catholic countries tend to be more conservative and religious. But Spain, Portugal,Italy and Greece (which isn't catholic) are all more theistic than Austria, France, Belgium & Luxembourg. (and for this question I'm intentionally ignoring former communist countries for a variety of reasons which are hopefully obvious)
